What’s For Supper? Oct. 28 – Nov. 3

David’s first birthday was October 27, and we celebrated with a pumpkin themed party at our house! Photos coming soon… We had a great time and I can’t believe that my BABY is already a year old! My weight loss goal that I set back in the spring was to lose a total of 50 lbs by his birthday. I ended up losing 10 pounds more than my goal, and I’m 75 pounds below my maximum weight, which was back in 2010 when Joshua was born. I’m also formulating a post in my mind about how I’ve finally achieved weight loss success, and I’ll share that whenever I get the chance! Anyway, thanks to the party I’ve got a bunch of Crock Pot Turkey White Bean Pumpkin Chili and Buffalo Chicken Macaroni and Cheese leftover for my lunches this week, yum!

Monday

  • Asian Salmon
  • Brown Rice (I like to mix in scallions, salt and a tiny bit of butter)
  • Sauteed Spinach with Garlic
  • Garden Salad with Light Raspberry Vinaigrette dressing

Tuesday

  • Grilled Pork Tenderloin
  • (leftover macaroni and cheese from the party for the boys)
  • Sauteed Red Cabbage (use chicken broth or water instead of butter or oil)
  • Homemade Applesauce
  • Garden Salad with Light Honey Mustard

Wednesday

  • Monterey Chicken (skip the bacon and use fresh chopped tomatoes instead of ro-tel)
  • Mashed Potatoes
  • Shredded, Sauteed Green Squash
  • Garden Salad with Light Honey Mustard

Thursday – Halloween! We’ll eat after we get home from Trick or Treating

  • Spaghetti Squash (regular for the boys)
  • Turkey Meatballs
  • Garden Salad with Light Caesar

Friday

  • Steak (not sure what cut, we got our cow share over the weekend so we have a huge selection in our freezer!)
  • Baked Sweet Potatoes topped with Plain, Fat Free Greek Yogurt
  • Roasted Brussels Sprouts
  • Garden Salad with Light Ranch

Saturday
