Apple Pie Quinoa

I almost called this Apple Cinnamon Quinoa because it just felt wrong to call this pie. I’m nothing if not a pie snob, and this is clearly not pie. But the flavors are inspired by pie, so fine. Apple Pie Quinoa! This is predominantly apple, healthy and yummy. It makes a comforting, filling hot breakfast as an alternative to oatmeal, but I could imagine serving it for dessert, too.

Weight Watchers Points Plus = 3 per serving. I’m doing Weight Watchers now, by the way…

  • 8 apples, peeled and sliced
  • 1/4 cup water
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp cardamom
  • 2 tsp brown sugar
  • 2 Tbsp chopped walnuts
  • 2 cups cooked quinoa

Cook apples over low heat with water and spices until softened, stirring occasionally. Stir in sugar, nuts and quinoa. Makes four large servings.

  1. That looks and sounds so good! I just had quinoa for the first time recently and really liked it, but I don’t know that I’m ready to try cooking it myself (I’m not much of a cook).
