I love to make homemade macaroni and cheese, which is my mom’s recipe. This is great for a side dish or a main vegetarian dish, and is one of my favorite comfort foods. The tomatoes are better than adding ketchup, and are a great way to dress it up.
- 3 Tbsp butter
- 3 Tbsp flour
- 2 cups milk
- 8 oz sharp cheese, shredded or in small cubes
- 1 box of medium shells, cooked and drained
- 1 sliced tomato
- Black pepper to taste (I like lots)
In one large pot, cook the pasta according to package directions. In another, melt the butter then stir in the flour and cook for a few minutes. Slowly pour in the milk and keep it over low heat, stirring often, until it thickens. Add the cheese and pepper to the milk, stir until it melts, then add the pasta. Top with tomatoes and bake in a 375°F oven for about 20-30 minutes.
