Gingerbread pancakes

I love these pancakes, they’re perfect for a weekend or holiday breakfast.

1 cup white flour
1 cup whole wheat flour
1/2 tsp baking powder
2 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
dash nutmeg
dash ginger
1 1/2 cups milk
3 tsp melted butter
1 egg
1/3 cup molasses
2 tsp vanilla extract

Combine all ingredients in a large bowl. Pour about 1/4 to 1/2 cup of batter into a preheated pan that you have sprayed or melted butter in. Flip pancakes when bubbles start to form on top. These pancakes brown quickly thanks to the molasses, so keep watch! Serve with butter, warmed maple syrup and/or confectioner’s sugar.
